Special Recipes Roasted Chicken with Pineapple Sauce




Ingredients: 


 

750 gm skinless chicken breast (remove fat)
2 tbsp Bumi Hijau Pineapple Sauce
1/2 cup low fat milk
3 tbsp vegetable oil
1 tbsp tamarind paste (mix with ½ cup water for juice)
2 cm fresh turmeric (pounded finely)
2 stalks lemon grass (Blend with ½ cup water)
6 cloves shallot (Blend with ½ cup water)
1 cm galangal (Blend with ½ cup water)
1 cm ginger (Blend with ½ cup water)
7-8 dried chilies (Blend with ½ cup water)
Salt and sugar to taste (Blend with ½ cup water)
Garnishing:
1 stalk cucumber (sliced thinly)
1 tomato (cut into ring)
5 lettuce leave


 


Methods:
  1. Rub chicken with salt and pounded turmeric. Marinate it for about 15 minutes.
  2. Wrap with aluminium foil and roast or grill till the chicken is cooked.
  3. For sauce, stir-fry the blended ingredients in hot oil until golden brown.
  4. Add tamarind juice and ¼ cup of water, stir-fry and leave for 2 to 3 minutes.
  5. Add Bumi Hijau Pineapple Sauce, low fat milk, salt and sugar to taste. Stir-fry again and leave for about 5 minutes.
  6. After chicken is cooked, unwrap the aluminium foil then arrange on a serving platter.
  7. Pour the sauce over the chicken.
  8. Garnish with cucumber, tomato and lettuce.
